Honey O’Malley Bars

Makes 18-24 bars

4 cups quick-cooking oatmeal

½ cup brown sugar

½ cup honey

1 cup butter melted

1 cup semi-sweet chocolate chips

¾ cup creamy natural peanut butter 

1. Mix together in medium sized bowl –  oatmeal, brown sugar, honey & melted butter until blended.

2. Preheat oven to 325 degrees. Grease a 9×13” pan. Spread mixed ingredients into bottom of greased pan. Bake in prepared oven for 15 minutes. Carefully remove keeping pan level – place on a wire rack to cool.

3. In a microwave safe bowl combine chocolate chips, and peanut butter. Microwave 30 seconds, stir, then continue to microwave in 15 second intervals just until chocolate is melted, stirring after each interval. Do Not Overheat! You don’t want your chocolate chips to seize. Spread on top of cooled bars, spreading evenly. Chill in the refrigerator to set topping. Cut into desired sized bars.  Keep stored in the refrigerator.
